Shrimp-Vegetable Quinoa Fried Rice


Cook quinoa according to package directions. Set aside and keep warm.


Heat oil in a large sauté pan over high heat. Stir in shrimp, onion and 1 tablespoon soy sauce; sauté 2 minutes. Add carrots and peas, broccoli, edamame and corn;; sauté about 3 more minutes….

You could also add shrimp or cooked chicken if you want more bulk! Lastly, quinoa fried rice makes great leftovers. I actually like it for breakfast! It’s no Benihana, but it’s pretty darn tasty. And probably much healthier, too.

I used quinoa to keep this recipe gluten-free but you will get a fluffier rice-like texture with couscous. Let’s not forget the shrimp.
