Peasant Herb Roasted Summer Veggies

In a large cast iron skillet over medium high heat, drizzle olive oil.  Place zucchini and squash and toss and coat with oil.  Reduce heat to medium and add oregano, basil, parsley, salt and pepper and toss well.  Cook for about 5 minutes.  Reduce heat to low and add tomatoes and toss.  Cook for about 5 minutes.  Remove from heat and cover with lid for about 7-10 minutes to steam….
