Stuffed tomatoes with mushrooms, parmesan and spinach


Heat 4 tablespoons of olive oil in a large frying pan set over medium heat. Add the spinach and cook for 2 minutes, stirring, you may have to do this in batches depending on the size of your frying pan. Tip spinach into a sieve set over a bowl, and press out all of the moisture with the back of a wooden spoon. Tip the spinach onto a board and finely chop. Put in a large bowl and set aside.


Using a perforated spoon, gently remove the porcini mushrooms from the hot water. Strain the liquid through a fine sieve and reserve the liquid to use as stock later….

Bruschetta with Tomatoes & Basil

In a bowl, mix tomatoes, basil, salt, extra virgin oil & garlic (optional).  You have the option of mixing the garlic with the tomatoes or rubbing them on the grilled bread.
Grill both sides of the bread on the barbecue grill (the best), in the oven, on a griddle or even in a bread toaster.
Rub one side with halved garlic, drizzle with extra virgin olive oil then spoon the tomato mixture on it…

Parmesan Baked Tomatoes. Something Simple

Preheat the oven to 450 F (230 C).
Cut the tomatoes lengthwise into approximately 1/3-inch (1 cm) slices. Place them on a baking sheet. Top with Parmesan, oregano, salt and pepper (season according to your taste). Drizzle with some olive oil and bake until tomatoes are tender and the cheese is melted, for about 10-15 minutes…
