Gorgonzola Potato Cakes (from leftover mashed potatoes)

Combine potatoes, gorgonzola and 1/4 Cup of the breadcrumbs in a large bowl.  Work the cheese into the potatoes with your hands for several minutes, making sure the cheese is well distributed and knot clumpy.  Form into balls as if you were making meatballs and then press flat so that the cake is about 1/2 inch thick.  Reinforce the sides of the cake by patting gently around the cake.  Place the remaining 1/2 Cup breadcrumbs into a bowl and season with salt and pepper.   Place the formed potato cake into the breadcrumbs, gently coating eat side….
