Homemade Tortillas – White and Whole Wheat Recipe

In a large mixing bowl, whisk together flour, salt and baking powder. Using your hands, rub the shortening into the flour mixture until evenly distributed (mixture should hold its shape when clamped between your hands). Pour in 1 cup water and use a wooden spoon to stir until mixture comes together, adding additional water as needed (I used 1 cup + 2 Tbsp water). Knead mixture by hand until smooth (I just did this in the bowl). Divide mixture into 8 equal portions and shape each portion into a ball. Cover dough balls with plastic wrap and let rest at least 30 minutes and up to 1 hour….

Homemade Flour Tortillas

Using the dough blade in a food processor, pulse flour, baking powder, salt, and butter until crumbly (just a  few seconds). Scrape down the sides as needed. If you don’t have a food processor, you can use a pastry cutter to work the butter into the other ingredients instead.

With the processor running, add water in a steady stream until the dough forms a cohesive ball….

DIY: Soft Flour Tortillas

In the bowl of the food processor fitted with the dough blade, pulse the flour, baking powder, and salt a few times to stir up the ingredients.  Add in the fat and process in quick pulses until the mixture starts become crumbly.  With the food processor on, slowly stream in the water through the feeder at the top, just until the a cohesive ball forms and starts traveling around the sides of the bowl.
Turn the food processor on and let the dough knead for about 30 seconds. The dough should clear the sides of the bowl and be soft but not overly sticky…
