Crunchy Coconut Chicken

Preheat oven to 375° and spray a baking sheet with cooking spray.
In a shallow bowl mix corn flakes, coconut, ginger, salt, and pepper.
In another shallow bowl beat egg and milk.
Dip the chicken into the egg mixture then into the corn flake mixture. Press to ensure the corn flakes stick. Place on a baking sheet and bake for 12-14 minutes…
