Today watching him walk off to school, without my hand in his, was hard. Bringing him home this afternoon and surprising him with a Salted Caramel Butter Bar was just the therapy I needed. And to finish off the day, my sweet six year old boy asking me to rock him before tucking him in bed, made my heart full again.

Chewy Chocolate Chip Cookies

I already had a really great chocolate chip cookie recipe, but I wanted to give these a shot.  I was a bit skeptical of the recipe when I saw cornstarch in the ingredient list,  but I decided to give them a try.  I know cornstarch is very light and figured that might add some lift to the cookies.  Whether it was the cornstarch or not, thse cookies definitely lifted.  I used a standard-sized cookie scoop to drop them on the cookie sheet and they came out perfectly round and uniform–just ready for a photo shoot.  And so, so good.  The best ever, in fact.  My new favorites :-)

My family, however, has found the soups and stews a little tedious.  They cheered when they came home from school, the smell of pork roast bathed in sweet balsamic vinegar wafting through the house.  Another cheer came for the bowl of warm mashed potatoes served alongside.  I threw together another batch of my new favorite veggie recipe, Green Beans with Olives, Sun-Dried Tomatoes and Pine Nuts that I shared on 4 Men 1 Lady a few days ago.  Oh, mama!  I could eat the whole pan of those beans in one sitting if my tummy would stretch that far.  They are really that good.
